VEGETABLE TARTS

Vegatable tarts - Latvian traditional meal.

To do our dish we need:
  • coarse rye or wheat flour - 1kg 
  • water - 400 g 
  • margarine - 100 g 
  • sugar - 20 g 
  • a little bit of salt 
  • 4 eggs 
Potato filling: 
  • potatoes - 500 g 
  • milk - 50 g 
  • butter - 30 g 
  • a little bit of salt 
Carrot filling: 
  • carrots - 800 g
  •  sugar - 100 g  
  • a little bit of salt
     sour cream - 50 g  
  •  fluor - 30 g 
First you must boil unpeeled carrots. Then peel potatoes and boil them in salted water. Then sift course rye or wheat flour in bowl, mix with margarine with your fingers. Heat water to 20 - 25`C, add sugar, salt and 3 eggs knead into the fluor mixture until a stiff dough forms that can be easily rolled. Roll dough into a sheet of 2-3mm thickness, cut out round shapes 10-15 cm in diameter. Fold up edges of each round to a height of 1-1.5 cm, and place on a greased baking tray. Fill each case with potato filling and then carrot filling. Brush with beaten egg and and bake in a moderate oven for 10-15 minutes, until the top is browned.
 Potato filling: when potatoes are boiled, drain them and mash. Add boiled milk and butter, salt and mix well.
 Carrot filling: when carrots are boiled, then peel them and grate. Add salt, sugar, sour cream and flour and mix well.
